Assembly Fermentation in Coffee Post-Harvest Processing

Due to popular demand, we are bringing back our cupping event at Page 8, in collaboration with Assembly Coffee, on Thursday 25 July with Claire Wallace, the winner of UK's Barista Championship in 2022 and came in 3rd in the World Barista Championship 2022. This time around, guests will be introduced to innovative controlled fermentation techniques to help achieve rich, unique flavours in specialty coffee. An audience Q&A session will follow, and all attendees will be gifted a bag of each of the coffees to brew at home. More details below:

Synopsis

Coffee producers once strived to protect harvested beans from fermenting as they prepared them for shipment. Now, farmers the world over are intentionally utilising innovative controlled fermentation techniques to achieve extraordinary flavours, create more value for their products, and challenge existing narratives for quality within specialty coffee.

This event is your opportunity to sample three high-quality coffees that have all been processed with controlled fermentation methods.

Alongside, the Assembly team will present on:

  • An introduction to fermentation in coffee
  • How nascent methods are yielding divergent results and why this is useful to the producer
  • How these results are achieved with consistency and at scale
  • How fermentation is challenging stereotypical characteristics associated with the origin
  • The role of fermentation in the future of coffee.
